I need help with making pralines?
I need some advice on how to know when my pralines are ready every time.
I am making pralines with a steam kettle, like the kettle used to make fudge. I use a candy thermometer, but the temperature never got to 234 degrees which is the soft ball stage for candy. The pralines did come out OK but they were dark because I continued to let them cook, waiting for the temperature to reach 234 degrees but it never did. Finally I just took them out and luckily they were not sticky.
I have tried the method of dropping the pralines in the cold water and waiting for them to make a ball but I have never had any success with this method; the the praline forms like a thick string shape and they always come out sticky when I use this method.
I appreciate any help anyone can give me.
I have a few questions for you.
1. Did you accurately measure your ingredients? If you don't have enough sugar, or too much water you may not reach the proper temperature.
2. Is your thermometer accurate?
3. Is it humid where you live? High humidity can create problems for candy making. Best to wait until the humidity goes down. (Never under stood how they do it in the South but they make pralines and divinity oh well!)
The recipe I have is:
1 1/2 Cups granulated sugar
1 1/2 cups packed light brown sugar
1/8 tsp salt
3 Tb dark corn syrup, helps prevent crystallization of mixture
1 cup evaporated milk
2 Tb butter
1 tsp vanilla extract
1 1/2 to 2 cups pecan halves
butter the sides of a heavy 2 quart sauce pan
Place sugars, salt, corn syrup, milk and butter into sauce pan. Over medium heat, stir constantly with a wooden spoon until mixture comes to a boil. continue to cook to a soft ball stage (236 degrees F.on a candy thermometer) Stirring occasionaly. If you do the cold water test, a ball of candy will flatten out when you take it out of the water.
Remove from heat and allow to cool for 10 minutes. Add vanilla and nuts, and beat with a spoon by hand for about 2 minutes or until candy is thick and begins to lose its gloss.
Quickly drop by heaping tablespoons onto waxed or parchment paper. If candy should become to stiff to drop by spoon, add a few drops of hot water.
Yields 9 to 12 large pralines.
